Make Your Own Cashew Milk
Making your own cashew milk at home is super easy and tastes amazing! I use it to replace dairy free milk in all kinds of things such as German Pancakes and my Green Tea Latte.
The Search for Dairy Free Milk
I have a dairy allergy! It was a big shock to me as I really love milk and couldn’t image a life without. Thus began my search for a possible substitute. I tried every store bought dairy free milk and nothing really quenched my desire for real milk. Most store bought substitutes are full of chemicals or extra ingredients and they are expensive. I really wanted to give cashew milk a try but living in Alaska has its limitations in the dairy free milk selections. All I could find included almonds, another of my allergies. I found a few recipes online and decided to try making it myself.
No Nut Milk Bag Required
The cashew milk I was making tasted wonderful but it was really time consuming. All the recipes I found required soaking and using nut milk bags. This involves squeezing nutpulp for what seemed like hours and also made a giant mess. I don’t have time for that! I developed a fast way to make cashew milk with very little mess and very little time. No more nut milk bag, no soaking and no waste!
Your Blender is KEY
I can’t stress this enough, to make this cashew milk quickly, you will need a very good blender! If you can make peanut or other nut butter with your blender, then it is sufficient. I use a Vitamix. Ninja blenders are also a great option! This blender is a staple in my kitchen and I think everyone should spend the extra money, if you can, to have a good blender in your kitchen. It is truly a life saver.
Instructions
First, put all the ingredients from the recipe in a high powered blender (this is important, see above) and fill with water to cover. Then blend for 1-2 minutes, until you can’t see any particles. The last step is to add water to desired constancy. If I need cream I leave it thick, if I need milk then more water is added and so on. See the Alterations section below.
Alterations
Total amount of water I mix in
- Cashew Cream: 2 cups
- Cashew Milk: 12 cups
- Skinny Cashew Milk: 24 cups or half the recipe but use 12 cups of water
When I make German Pancakes, I use a 1:1 ratio of Cashew Milk to water. That would be 1/2 cup of Cashew Milk to 1/2 cup of water for a total of 1 cup.
If You Don’t Have a Strong Blender
If you do not have a very strong blender you can still make this milk, however, you will probably need to soak your cashews (30 min in warm water or overnight in cold water) to soften and may need to strain using a nut milk bag to get a smooth drinkable milk.

Homemade Cashew Milk
Equipment
- High powered blender such as Vitamix
Ingredients
- 2 cups raw unsalted, unroasted cashews
- 2 each Medjol dates, pitted
- 1/8 tsp sea salt
- cold water Approximately 13 cups depending on *desired thickness. I use tap water but I have amazing tasting Alaskan well water. If your water is highly chlorinated you may prefer to use filtered water.
Instructions
- Add cashews, medjol dates and salt to high powered blender and cover.
- Add cold water to cover plus one inch higher than the cashews. Aproximately three cups. The cashews will start to float.
- Slowly turn up the power to the highest blender setting and blend for at least one minute, until almost all the particles are gone. It should not take more than three minutes.At this point you have cashew cream and can use it as a cream substitute for some things.
- To make this cream into milk pour it into container of choice and add water to desired consitency. *See notes for different possibilities.
- Refrigerate and shake before use. This lasts aproximately one week when stored in the refrigerator.
